How do you like the Toyo AT3 EVs overall? Do you happen to know if they look any different (better or worse) than the regular AT3s?

Not the member you asked, but I am liking mine. The main visual difference is the lugs on the sidewall are less pronounced.

I just noticed something else. The Toyo Open Country lettering is not as pronounced and blocky, it looks flat. Are the block letters mounted on the inside, or is that another difference between the EVs and the standard AT3s?

The raised lettering is indeed raised with relief texture, though is probably less so than the standard AT3.
The EV version is designed with weight, rolling resistance in mind for range. I find them suitably sticky, great on dry road, great in the wet. I waited all winter to try them on snow and the closest I got was about five miles of driving on a portion of an inch of snow. Mother nature didn't want to cooperate with snow testing this year. I have about 6000 km on mine so far and am not regretting the choice in tires.

Just received my 18” Tacoma TRD wheels. Debating between 275/70R18 or 285/70R18. My noob question is, can I use my factory 18” OEM wheel as a spare? I don’t plan to do the 5 tire rotation only 4 tire rotation.
You can do anything you choose, but if the spare has a dissimilar diameter and you have to use it, I would be cautious and only use it for moderate speed and short distances.
The short answer is yes. Ideally your spare should be the same size as the other 4, but being mismatched to get you to a place that sells/repairs a damaged tire, you should be ok. As mentioned above, you have to be smart about it.
