Air conditioner doesn't stay on between vehicle restarts?

Check out the manual, it may solve your issue.
Obviously I did that first...but it doesn't help, as it doesn't seem accurate...

Pg. 469:
"Operate the temperature control switch upwards to increase the temperature and downwards to decrease the temperature.
If the “A/C” switch is not pressed, the system will blow ambient temperature air or heated air."

This is how every other Toyota I've ever owned as functioned, however with this 2025 Land Cruiser, its behavior is different:
1. The "A/C" light indicating it's on does not persist across vehicle starts (as described in my initial post)
2. This doesn't seem to matter. Even without "Auto" climate enabled, and the "A/C" button NOT pressed, the vehicle is DEFINITELY blowing cool conditioned air when the desired set temp is lower than the outside temp.

I'm actually fine with this, now that I'm used to how it works...but it's definitely different than the manual describes...and also begs the question of what the A/C button is actually for, since it doesn't seem to matter if you press it or not...? Only thing I can think of is if you want to force the A/C on for use with the defroster even if it's cooler outside, perhaps? (i.e. it's more of an "override" than actual toggle switch?)

Have you tried to turn off ECO in the climate settings on the large display? I have not tried it either but I think that may be your problem. I leave climate on ECO because I am a cheap bastard, and yes I have to turn the ac back on every time I stop/start the engine.

No...I don't use ECO mode at all, whether it's the driving mode or for climate. Just to make it clear, since my vehicle is obviously cooling the air (it's been near 100F here this week, I'd know if the A/C wasn't actually engaged), it's not a problem for me, I just find the behavior odd.
