Would the attached wheels/tires fit on my LC 1958 Trim?

Wheels - Method 305 17x8.5 | 6x5.5 | 25/5.7
Tires - MT Baja Boss 295/70 R17

Icon has a video testing different wheels and clearance, they say 25 offset is a bad idea without a lift. Stick with something around 40.

you want to be around 45 to 35 MM for larger tires with no lift. I have 35mm and 285/75/17 and fit fine spare sticks out a little more but it tucked pretty far up as it could go.
 
Agree, I have the Method 703 in a +35 with nitto terra grappler 3 in a 285/70/17 and the spare is pretty low. I don't think the 295 fits in the spare tire mount.

With that width and offset, you may have some issues with rubbing/clearance. If you get something like the 703 with a +35 offset, you'd have a better chance of getting everything to fit nicely. Mickey Thompson says that tire is a 33", so the diameter of the tire will fit with no issues. Here's an excellent video showing the details of how to get bigger tires to fit...
