I stumbled across this article where they discuss a version of the 250 that is being marketed/sold in the UK and thought y'all might be interested.
Essentially, they remove the back seats, add a "cargo tray" that covers the floor from the liftgate to the front seats, a bulkhead behind the front seats, and steel panels covering the rear windows including the windows in the rear doors. I know a lot of people on here would love to have that cargo tray until they find out that it won't work in our US version because of the hybrid battery "hump":
